Paleo Apple Pie Bars

Apple Filling Ingredients:

2 apples 

1/2 cup water 

2 tsp tapioca 

2 tbs apple sauce 

Cinnamon 

Crust Ingredients:

1/4 cup tapioca flour 

2 cup almond flour 

2 tsp maple syrup 

1 tsp vanilla  

1/3 coconut oil 

1/3 almond butter 

Cinnamon 

1 tbs honey or stevia

Apple Filling Instructions:

1) Peel and slice apples into cubes.

2) Combine apples and water into a pan and stir until the apples have softened. 

3) In a separate bowl combine tapioca flour and cinnamon. 

4) Once apples have softened pour in the mixture. 

5) Add in apple sauce and stir. 

6) Once all combined, take off heat and prepare the crust. 

Crust Instructions: 

1) Combine dry ingredients in one bowl and wet in another. 

2) Stir and combine wet and dry ingredients together. 

3) Press 3/4 crust batter into pan ( save the rest for crumb topping). Bake crust for 10 min. 

4) After 10 min, take out crust and pour in apple filling. Use the rest of the crust batter for the crumb topping. 

5) Bake for another 12 min. 

6) Optional: top off with some paleo vanilla ice cream or coconut cream. Enjoy!
