Paleo blueberry coffee cake muffins
Ingredients:
1 1/2 cup almond flour
1/2 birch benders paleo pancake mix
1/2 cup melted coconut oil
2 tbs date syrup
1 tsp baking soda
1 tsp cinnamon
pinch of salt
2/3 cup blueberries
2 eggs
Optional: stevia for extra sweetness
-makes 6 large muffins
Instructions:
1. Preheat oven to 350.
2. Mix all dry ingredients together.
3. In another bowl, mix together the coconut oil and date syrup.
4. Combine together and put aside 3 tbs of the batter for the crumb topping.
5. Mix in the eggs and then gently fold in the blueberries.
6. Scoop into muffin tin and sprinkle on the crumbs. You can also add some additional cinnamon to the top.
7. Bake for about 15-17 min.
8. Cool and enjoy!
