Paleo Matcha Cookies (with Vegan and low carb options)
Ingredients:
1 cup almond flour
1/2 cup coconut flour
1/2 cup tapioca flour
1 tbs raw honey
1/2 tsp stevia
1/2 tbs matcha powder
1/2 tsp baking soda
pinch of sea salt salt
3 tbs coconut oil or ghee
1 egg
1 tsp vanilla
(optional) cacao nibs or chocolate chips
Instructions:
1. Preheat oven to 350.
2. Add all dry ingredients in one bowl and mix.
3. Melt coconut oil and honey together and mix in with dry ingredients.
4. Add in the vanilla and egg to the mixture. After the dough has formed, pour in chocolate chips/cacao nibs and mix.
5. Form batter into roughly one inch balls, lightly flatten them in the palm of your hand and place on cookie pan.
6. Bake for about 7-10 min (to check if they’re done, gently lift up cookie to see if it is golden brown on the bottom, not the top).
7. Cool and enjoy!
-For a low carb option, replace honey with stevia (or desired sweetener) and tapioca flour with almond flour.
-For Vegan option, replace honey with agave (or desired sweetener) and egg with flax egg.
