Blueberry Pie Bars

Crust Ingredients:

2 cups almond flour 

1/4 cup coconut flour 

Pinch of salt 

1 tsp vanilla 

1/3 cup honey or maple syrup 

1/3 cup melted coconut oil or ghee 

Blueberry Jam Ingredients:

1 3/4 cup blueberries 

1 tbs tapioca starch 

1 tbs honey or maple syrup 

Pinch of salt 

1 tsp lemon juice 

Instructions:

1. preheat oven to 350 

2. Mix together crust ingredients and put in fridge for about 5 min. 

3. Grease pan and press part of the crust mixture in the pan (save the rest for the top layer) 

4. Bake for roughly 4-5 min 

5. While the crust is baking, combine all of the blueberry jam ingredients in a saucepan over medium heat. 

6. Stir until the jam is a thick consistency. 

7. Take crust out and spread jam evenly on top. 

8. For the top crumble layer, sprinkle the leftover shortbread mix. I added walnuts to the top for and extra crunch. 

9. Bake for another 20 min. 

10. Take out, cool, cut and enjoy!
