Paleo/Keto Maple Walnut Muffins
Ingredients (makes 6 muffins):
2 cups almond flour
1/2 cup coconut flour
1 tsp baking soda
2 tsp vanilla
3 tbs ghee or coconut oil (melted)
2 eggs
1/4 cup almond milk
1/4 cup maple syrup (I used sugar free)
1/2 cup chopped walnuts
1/2 tbs cinnamon
pinch of salt
Instructions:
1) Preheat oven to 350 and grease or line muffin tin.
2) Mix wet ingredients in one bowl and dry in another. Make sure to melt ghee before adding.
3) Combine all ingredients and mix together in one bowl.
4) Spoon batter into muffin tin.
5) Sprinkle more cinnamon on top.
6) Bake for about 10-12 min (I like to undercook them a bit so that the inside is nice and gooey).
7) Eat warmed up! They pair wonderfully with cashew butter! They taste almost like french toast.
