Fluffy Coconut Chocolate Chip Blondies
Bottom Layer Ingredients:
1 egg
1 cup cashew butter
2 tsp vanilla
3/4 cup almond flour
1/2 tsp baking soda
1/3 cup chocolate chips (I used sugar free)
1/2 tsp sea salt
2 tbs melted coconut oil
monk fruit extract
Top Layer Ingredients:
1/4 cup melted coconut oil
1 tbs melted coconut butter
1 egg yoke
1/4 tsp sea salt
1/2 cup coconut cream
1 tsp vanilla
monk fruit extract
Instructions:
1) Preheat oven to 350.
2) Mix bottom layer ingredients and grease 8x8 pan. Press batter into pan so that it covers the bottom and bake for about 7 min.
3) Mix all top layer ingredients and pour over bottom layer (you’ll need to use your hands to spread the top layer)
5) Bake for another 10-15 min.
6) Cool, Cut & enjoy!
