Paleo/Keto Lemon Chia Muffins
Ingredients:
4 eggs
Zest of 2 lemons
1/4 cup ghee or coconut oil (melted)
2 tsp vanilla
1/2 tsp salt
1 tbs chia or poppy seeds
1/2 cup coconut flour
1/2 tsp baking soda
6 tbs lemon juice
1 tbs tapioca flour
Icing:
1/3 cup lemon juice
2 tbs coconut butter
2 tbs coconut oil
Monk fruit extract
Instructions:
1) Preheat oven to 350.
2) Pour dry ingredients in one bowl and wet ingredients in another. Mix separately.
3) combine wet and dry ingredients.
4) Line or grease muffin tin and bake until golden brown (makes about 8 muffins).
Icing instructions:
1) Melt coconut butter and oil.
2) Add in lemon juice and sweetener of choice. Mix.
Notes:
You can use the batter to make frosted lemon chia cookies as well! Both are delicious.
